Half pint apricot.' puree',' i' pint cream, 3pz. 1 sugar, lot. French leaf gelatine, 1, teaspoonful lemon- juice: Take half' a tin' of apricots, eook them a little, and pass them through a hairsieve. There must he half a pint of puree Whip" the cream. •Melt the gelatine in 1 gill of apricot syrup, add 'the sugar, and when it has cooled, add it to the cream and apricot puree previously mixed together. Pour into a moulds and when set dip tlie mould quickly into hot water, shake, and turn out. The cream, will look very much nicer if a layer of jelly is.set at the bottom of the mould, before the cream is poured in, and after it is turned out sfltuo chopped jelly put round. . " TV.
