Three eggs, 1. teaspoonftil flour, \oz. butter, lloz. castor sugar, a few drops essence of vanilla jam. J Put 2 yokes of eggs into a basin with the sugar, .and beat with a wooden spoon for ten minutes. 'Then stir in the flour and vanilla ;' whisk the 'whites of eggs 1 to a stiff froth, and mix'lightly to'the yokes of eggs. Make the butter just hot in a small frying pan; 'pour iri'-.the .'mixture, and ,stir it over the fire for • a few seconds, until it begins to 6et..'Mhen-put is into the oven (quick) for about ten minutes. ; Have some jam ready warmed in a-saucepan. Turn the omelet on to a, sugared paper. Mark it across the middle with"a knife. Put the jam on one half. Fold the other half over and serve very hot. • FOE TO-MORROW. Loin' of mutton, cauliflower, 2 pints stock, curry powder, chutney, apples, lemon, onion, 3"eggs, I.pint milk.- .
