Potatoes. •' Pancakes. Gooseberry fjpol.,Cucumber Soup. Method.—Cut into very small neat dice threequarter cup of the following vegetables:—Carrot, turnip, .onion, cup full of peas, half a cup of chopped cucumber, and a handful of shredded lettuce. /Put all these into a saucepan with a tablespoonful of butter, and let them' cook slowly for ten minutes without browning. Then add to. them a quart ov more of boiling water. Boil them for about thirty minutes, or until soft, and then mix a tablespoonful of flour with a cup , of milk, and slightly thickon the soup with this. In thickening soup or sauce's great care should be taken that the ingredient they are thickened with has time to.cook. Flour takes about five minutes'. For a change this soup may be made without- milk by adding a little meat extract to give it a meaty flavour. FOR TO-MOKEOW. Ingredients.—Fish, potatoes, cutlets, fruit for a salad, 1 lemon, 2.eggs, V pint of milk. .
