Mutton Broth. Roast Beef. , Horse .Radish Sauce. Vegetable. Marrow. Potatoes. Pineapple Fritters. Sago Custard.
MUT ( TON BROTH.
Ingredients.—Ulb. scrag end of the neck of mutton, lj . toaspoonfuls of finely chopped Jarsley/, 2oz. of pearl barley or rice, 1 turnip, t onion,_l carrot,'l leek (if possible). •Method.—Skim the fat from the mutton liquor left from yesterday, cut the neck of mutton into very small pieces; add the, salt, pepper and let it simmer for about U hours; cut the vegetables into dice. Remove the very large joints from the soup, but leave soino . meat in it, then ; add the vegetables and rice, • and lot it boil gently until the vegetables are cooked (about half an hour). Put the parsley mto the .soup tureen, and pour the hot soup on to .it. ; ■ • . a
