GLEAN MILK.
The supply of milk for human food is almost becoming a branch of tho mcdical profession. An American company lias purchased an estate of 2o(J0 acres, to be ciocked. with a thousand cows for' the > supply of milk direct from the farm to tho consumer, and the wliolo system is to bo under tho control of a scientific man who lias been acting as Health Commissioner for Bylfalo. The milk is to be drawn by machine, and passed from the machine into bottles: so it will practically not bo exposed to t-lio atmosphere, This is an improvement on the Italian system, wliero tho cow ia taken from door to door and milked into tho householder's jug. 'l'lio bottles are to be placad in ice, and not handled until they arrive at tho homo of tho customer. Tho chief object of this process of cooling is to prevent tho increase of bacteria, which is enormously influenced ,by temperature.The ice-cooled milk, never exposed to air, never touched by hand, never liable to attacks of bacteria, falling from the coats, of cattle, will be delivered to the consumeri relatively pure, and—unwaterod. Tho experts of the company believe that ihoy will be able to produce milk at tho cost of Id. a quart, and that it will cost'another la. to market it.
