Method Melt. loz. of butter in a utowpan without. getting it very hot. .Then add to it 8 large turnips peeled and sliced, also a. sliced onion: Let these cook slowly for ten , minutes with. out browning, and then add about. 2 quarts of stock ior water. When tliis ' has boiled -to a thick ipulp' pass it, vegetables and all, through a sieve or ' - ■ colander. .Put' it back into : the saucepan and : add a.llittle sugar, salt, and pepper to flavour—some people . would like a little nutmeg :as well. Serve with'this soup; sippets'of fried bread, or squares of crust that you have put in the oven to dry. If in the, country, . where cicam niay bo plentiful, add. a little, to. the saup,. just before, serving it. ,If carefully made, this soup is nice .'made with the vegetables alone. It'should be thick, white, and smooth, when it is served.
