Ingredients Jib. of breadcrumbs! 2 lemons, salt, Jib. of flour, Jib. of milk, ■2 eggs, 5 or 6ozs. of suet or butter. Method, of preparation Put somo, water 011, to boil, or steam the. pudding in. . Mix the flour, suet or butter, aud sugar, together., Wipe the' lemon and - then grate the yellow rind from it, being careful not to let any of the white part.of the rind'go into the pudding, or it ; will have a bitter taste. Beat the and add tho milk to them. Mix nil tho ingredients -well, together and put 1 them in a- buttered mould. Cover the mould with buttered 'paper,.' mid stand it in ; a saucepan with enoiv/h - boiling -water to come -half' way up it. Steam it fori a long time, at any rate for-more -tba'n- .two hours. The.-water will boil' away,; and,' as' mora- boiling water'will be needed to-replace it, do not forget to have some ; ready.''at hand. Sauce for the pudding:—For this put ! a little lemon juice and flavouring with a little water 'and sugar on - to. boil. Thicken-it with a teaspoonful of co:-ii-, 1 flour. Cover it with 'saffron or" cochineal. ' 'In dishing; a sauce should never bo poured over a pudding, but round it. FOR TO-MORROW. : • .
