CHEESE OR BUTTER?

A PROBLEM.. Many heated arguments liavo occurrcd around the directorato firesides of dairy factories as to whether cheese or butter pays best; and 110 doubt many differences of opinion havo been expressed on the minor points of tho question.

It will be interesting to ascertain what prices must prevail to make the profits from butter-mating and from cheese-malting exactly equal. Wo find that they will bo equal when: — (1) A milk yield of 40001bs. yields 1601b's. of butter fat per cow per annum. (2) The butter sells for lOd. per lb., and the overrun pays for tho making. (3) Skim milk is worth a half-penny per quart. (4) A pound of butter fat makes 2£lbs. of cheese. (5) Cheese sells §at oJd- per lb., and costs lid. per lb. of ■ buttter for the making.
