HOW TO CHOOSE A COW.
The grazier who breeds for <he butcher, the dairyman who sells his nrlk fir tow* use, the farmer who makes hitter or cheese, and th? poor man who wants a hardy thrifty cow, either for his fami'y or general dairy purf oses— each of th< se require a different breed of cattle. A good beast fo • r>e mayhe fell but nstlrss to the others. For tbe large stockowner, the improve- d shot thorns possess such an acknowledged superiority tbat there is no need to enlarge upon their merits; for hi t*er, ih j Jersey breed is regarded as the bf st, in England and America; for milk, tbe Ayrshire is excellent; while for the poor rran, who h?s or.lv mountain pasture, or scrubby land, the Kerry breed is the most hardy and- profitable. A conthat is good for butter will be good for cheese, if the soil and pasture is suitable to the production of the latter article; but as a rule, it is' useless to a'tempt tomakero-'d cheese on anything but a limestone soil. It may be conceded that for n.ilk and butter some varieties of the shorthorns, or animals with a large infusion of shorthorn blood, are excellent; but it must be borne in mind that where this is there the cattle are fed on rich artificial food. We repeat that the shorthorrs for the butcher,' the Ayrshire for milk, the Jersey or Aldfrney for butter, and the Kerry lor hardiness and general usefulness as a poor man's cow, is the rule that should be followed.
