Britain Asks For Coloured Cheese
NEW PLYMOUTH, June 23. To enable New Zealand to exporj, 20,000 tons of coloured cheese next season, cheese factories in the Donnnion are to be requested to manufacture coloured cheese during the first week oi each month, it was announced at tne annual conference of the NationaJ Dairy Federation at Hawera today,; This step is being taken to endeavour to meet the requirements of the British. market. ■ Last Thursday consideration was given to a request from Britain for an appreciable quantity of coloured cheese, said Mr. T. F. Woodeoek, shipping manager of the New Zealand Dairy Products Marketing -Commission. Be-
fore the Second World War one-third oi the Dominion's cheese oiftput was coroiired cheese but for one reason and another the manufacture of coloured cheese ceased. It was now felt m London that the time had arrived when its manufacture should be resumea. Last season there was insufificient- coiouring' in the country to malce more than 5000 tons but that did not apply today, although the eost of colouring would probably be 'twiee the prewar price. Before the war coloured cheese • presented several problems, among ; them being handling at grading stores and the necessity for port-marlang them, and a scheme evolved was ealculated to have eliminated the worst proolems of the past to ensure a regular, flow of coloured. cheese into ■ trading stores and to eliminate- the need i for? port-marking. It was suggested that all companies; make coloured cheese on the first seven' days of each month, said Mr. Woodeoek. During the remainder of tne month they would confine manufacture to white cheese. It might be £ that some companies found it unprofita'ble to make coloured cheese because o|. particulai- loeal condit^^Jrt^^^kte^^cases* the grader would decide whether the company would be permitted to refrain from malcing coloured cheese. The industry could be assured that it. would be compensated for the additional cost.
