Julienne Potato with Savoury Sauce: Cut raw peeled potatoes into strings the size of macaroni. Cook them in boiling salted water for 20 minutes. Melt 2 ounces of fat, and saute 2 small chopped onions and 2 teaspoons of mixed herbs in the fat. ..Add 2 tablespoons of flour, s'tir thoroughly, then 1 pint of milk, 2 teaspoons salt, i teaspoon pepper'and cook in a -double boiler for 20 minutes.' Strain and pour over, the cooked potato. Sprinkle with grated cheese and serve.
