STUDY OF CHEESE STARTERS
AUSTRALIAN EXPERT'S VISIT. Trouble with starters in the making of cheese in the western district of Yictoria has prompted a visit to New Zealand by Mr.-D. I. Shew, bacteriologist to a proprietary lirm which operates five cheese and one general proeessing factories in Australia. Mr. Shew 's firm has from tim.e to time made an exchange of starters with the New Zea* land Dairy Research Institute at Massey College, but it has been decided that personal contact witli the Dominion organisation may be most effective in overeoming the troubles encountered in the growing dairying industry in Victoria. Mr. Shew, who arrived from Australia by air last Eriday, will remain in the North Island for about a fortnight, much of which time will be spent at the Institute in studying the single strain starters developed there. He will also talce the opportunity of studying the dairying industry generally. Mr. Shew states that though the industry is growing in Victoria there are not yet in Melbourne adequate facilities for training raen as dairy scientists, conseqnently an agreement had been entered into whereby four Australian students in eaeh of five years could be aeeepted at Massey College.
