If a can is prope'rly cleaned qn4 appreciable growth of any ' residuat bacteria is not likely to take place, but ii' it is left wet, some baeterial development will oecur even when the can is properly cleaned./ Much of this, will, no doubt, be washecl out b^ the riiise at the fariii Be'fofe the can is' used, but the drier the can the less likely the spread of any irifection into the cream, and the sweeter it will smell when the lid is taken ofi\' In discussing this subjgct in its latest 1 >lletin to dairy factories, the New Zealand Dairy Rqsearch fnsfitufe adds that the cans as they issue from the washer contain the warm air forced into, them for drying. They may be quite dry when the lid is put on, but if the warln air is mqistu reladen, therq will. be: some condepsation of ' moisture from it as the can cools. The amount of moisture present earnot be' leos than the amount in the air at tlie intakq. Care is necessary, therefore,' j;hat dry air is supplied to the hot blast intake."
