Sichuan cuisine promoted

NZPA-Reuter Chengdu, China China has served notice of a new campaign to attract the palates of the world with an export commodity sure to spice up its foreign exchange earnings — Sichuan cuisine. The south-western province of Sichuan, famous for its hot, spicy food, has already established a beachhead in the Western world. Pu Mantang, one of the province’s top trade officials, told Reuters the main assault has yet to begin. “Ours is One of the four great cuisines of China, along with \ Guangdong, .Shanghai and Peking. Our cooking can be compared with that of France — like opium, once tasted, it is irresistible,” he said.

Sichuan’s Corporation for International Technoeconomic Co-operation, which Pu heads, has set up 13 restaurants in eight countries with 150 Sichuan cooks manning the woks.
