The following recipe is an adaptation of a well-known Southern American method of cooking yams. Sweet potatoes, kumeras or yams may be used. Ingredients: 6 large oranges. 6 sweet potatoes or kumeras or 10 to 12 yams. 5 tablespoons of cream. 2 tablespoons of butter. Grated orange peel. 2 tablespoons sugar.

Method: Cut the tops off the oranges and with a spoon scrape out all the pulp. This can be used for some other purpose. Wash and boil yams in salted water until soft. Peel and mash well. Add the cream, the butter and a flavouring of orange rind and orange juice and sugar. Salt to taste. Beat until light and fluffy. Then fill the orange cases with the mixture and bake until lightly browned on top.
