Cooking For 1966 PORK CHOPS WITH ORANGE SAUCE

The flavour of orange is not usually associated with pork. Yet it can be very delicious. Try It with the following recipe for grilled pork chops and an orange sauce.
Ingredients: 4 pork chops Mashed or creamed potatoes loz butter 1 level dessertspoon cornflour Finely grated rind and juice of two oranges 2oz demerara sugar 1 tablespoon finely chopped parsley Salt and pepper.
Method: Place the trimmed pork chops under a hot grill
and cook for a few minutes on eac hslde until lightly coloured. Reduce heat of grill and continue cooking for 20 to 25 minutes. Boil and mash potatoes, adding butter and cream or evaporated milk and beat well until smooth and creamy. Arrange the cooked chops on bed of hot potatoes and coat with a little of the following orange sauce, serving the remainder of the sauce in a sauceboat To make the sauce, melt the butter in a saucepan, blend the cornflour with the orange rind and the juice and add to the hot butter, together with the sugar, parsley and a seasoning of pepper and salt Cook, stirring over gentle heat, until the mixture thickens.
