Sir, —Fish and chips and pies supply meals for large numbers of New Zealanders and serve as lunches for hosts of school children and workers. Our municipal authorities should therefore ensure that these foods maintain a high standard. Some fish and chips are clean, fresh, crisp and tasty; but in too many shops the fish is doughy and badly cooked and the chips are either doughy or like matches. The best maker of fish and chips I know once told me it all depended on the preparation he put into it, especially the regular changing of fat. Dirty, unchanged fat is far too common in fish shops today. Cannot something be done to ensure that genuine steak pies can be bought by those who require them?
