PASSION FRUIT JAMS
A letter from Epuni asks for a recipe for jam using passionfruit. The writer had tasted one which was delicious, but did not know what other fruit was used with it, she said. This is a little difficult, as the passionfruit may have been made into a very attractive jam on its own with out addition of other fruit. The passionfruit may have been teamed up with almost anything for it will blend very well with peaches, apples, pie melon, tomatoes, marrow, grated carrot or almost anything for added bulk which has not too strong a flavour of its own as, for instance, black currants. A little passionfruit may be added to give a fruit salad appearance and flavour to other two-fruit jams, such as peach and pineapple, or marrow and pineapple. If the flavour is required without the seeds, tie the fruit pulp in muslin and cook in the usual way, but squeezing out to return all juice and pulp to the pan when discarding the seeds.
Melon and Passionfruit Jam Ingredients: 61b cut up melon 61b sugar 1 dozen passionfruit 3 cups water 2 lemons. Method: Finely cut up melon, add water and lemon juice and cook until transparent. Add sugar and passionfruit and cook until it will set when tested;' about 114 hours. Passionfruit and Apple Jam Ingredients: 41b chopped apple 41b sugar 1 cup water 30 passionfruit Method: Put chopped apple and water on to cook; add passionfruit and sugar and boil rapidly until it will set. If desired Seedless, bring passionfruit to the boil separately and rub through a sieve into the apple.
