TO THB EDITOR Or THZ PRESS. Sir, —I saw a few days ago an account of a Wellington butcher who had been prosecuted for either washing or boiling tripe with a tripe bleaching powder. The inspector said it was not fit for human consumption, and.he is -quite rights the flavour is horrible. I understand that this chemical not only bleaches the tripe, but also- swells it and makes it heavier than it was before boiling. It is time the inspector started operations on some of the Christchurch butchers who use it, but say they do not. It is impossible to get tripe as white arid swollen looking as these butchers do by ordinary washing arid boiling. The .smell is enough without tasting it, and I trust the inspector will take steps to prevent this chemical being used on tripe.—Yours, etc., PURE FOOD.
