DAIRY INDUSTRY. NEED FOR BEST QUALITY. In the course of an address to the Dairy Produce Board, and the chairmen of dairy factories, at Massey College, Professor Riddet stated that at the; present time, with extreme competition in-dairy markets, it was obvious that New Zealand must supply the markets with the best quality product. It was equally obvious that the return of the Dominion to prosperity ultimately must depend upon „ increased production. Summarising cheese experiments, Professor lliddet stated it could I be definitely said that the following may play -a part in individually or collectively producing openness in cheese: —Bad milk, inactive starters, the manufacture of weak-bodied cheese, the aplication of salt. to curd before the latter was ready for salting, hastening the making process beyond the normal rate, and the 1 careless packing of curd in the cheese hoops.
