Concerning the proposal to send frozen rabbits to find a market in \merica, the United States Consul m tSolnide, (Mr W. A. Bickers) informed . a representative of the South Australian "Register" last week that if refrigerated vessels could be procured to ta& them to New York /ie believed tHero would bo a big. demand among the populatioq.of that city. There were m America tfo kinds of rabbit. One was tbo "cottontail," which was in places fairlv numerous in the Eastern btates and "Middle West, and was sometimes a menace to voung orchards. Then there was tho "Jack" rabbit, a much bigger variety, found in the West. As an article of food, rabbits were regarded as fairly good eating, and by no means a poor*man's diet. He had seen them on sale at Is 6d a head retail. Of course the refrigerated rabbit would bo a different proposition from that freshlv -<■ caught, but with the prevailing high prices anything like cheap moat would bo a godsend to many people, especially to thoso living in the tenement sections of New York. In America there was certainly no prejudice against the eating of rabbits, such as existed among many Australians,. Mr Bickers mentioned that when he was in Hobart an American who had come out to the Commonwealth as a special agent in connexion with skins* and leather, wat strongly of the opinion that there shouicl he a good opening for refrigerated rabbits in New York. The matter, however. was only discussod informally, aoo thero was no trial shipment, as at that time the whole output was under con- * tract to the British Governmflnt.
