PASTECRISATION OF SKLM- . MILK.

In conjunction with the CamWillie Co-operative Dairy Company, tlii> Department is carrying out a practical 'lfinonstration in the pasteurisation oi skim-milk, on similar linws to I'nisc iidoptcd in thn demonstration at (.'lf-n Oi'otia. whom successful results nvro ol)i;iined two years ago. The phtrit. which has been erected b.y the officers of the Dairy Produce Division, i>; <liiF<-n>iU in typo from that used at Ck-ri Oroua in that thi< milk is treated •>n what is known a.s the regenerative -vMuin. By this means not only is -kirn-milk heated Ih'eli enough to -.ta.'ul the Storch test, but. it is dolivcr.•d to the. suppliers at a temperature which will be . just about right for tt'eding purposes when it reaches tho larxi). The whole milk is rlevated so' as to gravitate over the outeide n«rI'ace of a large tubular appliance (the regenerator), similar in appearance to :> cooler built on the Luwronce principle. .Having done so, it collects in a tray and flows to tho separators. The skim-milk from the separators passes into' an ordinary pasteuriser, and on «»ihcrßintc therefrom is forced up i hrough" tho inside of tho regenerator mentioned above, and from thence to iho skim-milk tank. The whole milk is therefore warmed up for separating by the hot skim-milk, and simultiineonslv the hot milk is reduced in temperature before going ontj to the tank for tho suppliers. An' actual working start, has been made, and ••vervtliing i« progressing satisfactorily and economically (says the "Journal of Agriculture").. Tho results ot »he demonstrations, especially from the ]>oint of view of the efficacy of the process of , pasteurising in preventing tho dissemination of tubercular infection among pigs, will bo very carefully checked. An officer ..f tho Live-stock and Meat Division, who has special . knowledge of dairy lactory methods and also a good knowledge "of the handling and <!are of -tpek. has been detailed to watcn tloselv and supervise tho demonstration. " This close' supervision will be maintained' throughout the season. It i,« anticipated that tho demonstration will serve tho end in view—convince »he ianners of the district of the great importance of pasteurising skim-milk lor calf and pig-feeding purposes.
