HONEYCOMB PUDDING .1 cup milk, 1 egg, 1 dessertspoon gelatine, 1 teaspoon sugar. Beat yolk of egg, add milk, sugar and gelatine. Stir over fire till mixture begins to thicken. Do not boil. Leave aside till partially set, then fold in stiffly,beaten white. LEMON PUDDING

1 cup sugar, 3 tablespoons cornflour, 3 cups water, juice of two lemons, whites of 2 eggs. Boil sugar and water together. Add cornflour mixed with lemon juice and a little water. Remove from fire and add beaten whites of eggs, mixing well. Pour in dish. Make custard with 2 cups milk, yolks of 2 eggs, and 2 teaspoons cornflour. Pour over pudding and allow to cool. Serve with or without stewed fruit.

Fish can be scaled more simply by plunging it into boiling water before commencing the task.
