New Machine Makes Butter From Milk
A new machine, developed by the Swedish Separator Co., producing butter directly from the milk, is likely to prove a sensation at the forthcoming International Dairying Congress held in Stockholm. Astonishing results have been obtained in the course of tests carried out at five Swedish dairies. The machine separates the milk first to 30 per cent and subsequently 82 per cent cream, with a transmutator converting the latter into what at this stage resembles melted butter in colour and consistency. After cooling, the product assumes the appearance of ordinary dairy butter but is somewhat harder. The fat content is better utilised than in the case of ordinary churning, although the difference is only a few tenths of one per cent, while the entire method l of production requires far less human attention than usual.
