Saving Tea The Chinese Way
A Chinese visitor has observed with dismay the “English way of making tea.” He has convinced his English friends by practical demonstrations that they waste nearly onethird of every pound of tea they use. Here is how tea should be made in his view: Warm the pot and place one and a half spoonfuls of tea within, just coyering only with boiling water. Allow to stand for half a minute; add a little more water, and allow to stand before repeating the process until the pot is filled. One and a half spoonfuls, he says, are quite sufficient for an average-size pot which should never be completely emptied before more Water is added for a second pouring.
