Lemon Sponge 3 egg Whites, %oz powdered gelatine, | pint water, 3oz sugar, thinly peeled rind 3 lemons, -f gill strained lemon juice. Chill egg whites. Dissolve the gelatine in the water over slow heat with the sugar and lemon rind, stirring constantly. Strain into a basin. Leave till cool. Stir in lemon juice and egg whites, Whisk till fluffy, in. about 10 minutes, ’turn into a wet mould, Chill. Unmould. For six persons.
