ORANGE RIND PUDDING Grated rind 1 orange, 6oz. plain flour, 2i>z. sugar, 2oz. shortening, I egg, 2 teaspoons baking powder, pinch of salt, little milk. Beat the shortening and sugar together until creamy. Add the whole egg and beat thoroughly. Sift the flour, salt and bakingpowder together and fold into the creamed mixture, adding sufficient milk to make into a dropping consistency. Add the grated orange rind. Pour into a greased basin. Cover and steam from 1 to IZ hours. Serve with orange sauce. Orange Sauce: loz. shortening, 1 small tablespoon cornflour, •» pint milk, 1 dessertspoon sugar, grated rind 1 orange. Melt the shortening. Stir in the cornflour and cook gently for a few minutes. Add the milk gradually, stirring until smooth. Add the sugar and grated orange rind. Stir until the mixture boils and cook for two minutes.
