CHEESE BUBBLE BREAD

3oz. plain flour, loz. grated cheese, loz. shortening, salt and cayenne, little milk. Sift together the flour, and cayenne. Rub in the shortening then add the cheese and mix well. Mix into a dry dough with a little milk. Turn onto a floured board and roll out as thinly as possible. Cut into small oblong pieces (one inch by two inches). Place on a lightly greased tray and bake in a moderately hot oven, temp. 400 deg. F. gas, 475 deg. F. electric, until crisp, about eight minutes. (Note: These biscuits make an excellent base for savouries in place of fried or toasted crutes. They may also be served with coffee at the end of the meal).
