SPRING WELL BREWERY:
By the invitation of Messrs Ellis and Wrigley, we yesterday paid a visit to their newly erected brewery. The building is plainly but substantially built of the best heart of kauri, and reflects high crcdet on the builders, Messrs London and Conway, who the proprietors say have completed their contract in the most workmanlike manner. The building is 30 feet by 30 in area ; it is three stories high, and contains a capacious cellar. The whole is built on the latest improved plan. The fittings were put up by the proprietors; they consist of a five-horse engine and boiler, which supplies two tanks and a vat in the upper storey ; the water is then heated by a steam pipe from the boiler, and passes into another vac named the mash tub, where the malt is mixed with it, and the process of mashing by a patent mashing machine is gone through ; from the mash tub the liquor is run into the wort vat, when it is boiled by means of a copper worm, through which steam is passed ; from thence, after passing over the refrigerator, which is kept cool by a constantly fresh supply of water from the tanks, it finds its way into the fermenting vat, from whence it is conveyed by an indiarubber hose to casks in the cellar. We admired very much the internal economy which is displayed in the working, showing the presence of a man who thoroughly understands his business. One engine is all that is required, as the Meam from the boiler is used for washing the tubs; and matters are so an .nged that one man can do all the work connected with the brewery. We are informed that the first brew will commence on Thursday, and that ws shall be able on Saturday week to drink the health of the enterprising proprietors in their own malt and imps.
