ANOTHER INJUSTICE TO IRELAND.
In your leader to-night you refer to an Irish stew as something into the making of which all sorts of odds and ends have gone. Such a dish no doubt would be called an Irish stew by many people, but quite wrongly. I object, as giving the title to a mixture of odds and ends seems to suggest a lack of fastidiousness with regard to food on the part of the Irish. The ingredients of an Irish stew are mutton, onions, potatoes, pepper, salt and water. If anything else is added to the dish it has no'claim to the name of Irish stew. IRISHWOMAN. [In the words of Ophelia, 'We know what we are, but know not what we may be."—» Ed.]
