" The cold storage of eggs is becoming a great factor in levelling up the market, as was predicted by mc years ago," writes Mr. D. Hyde, the Poultry Expert, " It will be seen in the summary of poultry and eggs prepared at the Government Depots in 1905-G that they were graded in Auckland and sent to cold storage 119,724 eggs; in 1904-5 there were nil. In 1904-5 there were 182-520 eggs sent to cold storage at Dunedin, and in 1905-6 350,904, or an increase of 174,384. From what I can learn, there is likely to be a very considerable increase in these numbers next year. When last in Dunedin I tested some eggs that had been in the T. and P. Company's cold store for eight months. The eggs were boiled, poached, fried and scrambled, and every egg turned out in splendid condition. Since then two dozen eggs have been forwarded to mc from Dunedin that had been in the same cool store as mentioned above, and kept there sixten months, and, though not so good as those first mentioned, were sweet, and could be used for bakers' purposes."
