It is in fact half a Cellar;, itho roof, a hollow cistern, full ofwator designed to promote coolness below ; tho extent i is fmfficient for stowing' more than a quarter of a million gallons. The Wine has to be stowed in ranks from floor to roof, making a inodigious woight.to bo sustained. The casks contain each from 1000 galleiis down to tho ordinary 00-gallon size. Adjoining is an extensive Bottling' Cellar. It is a' fixed fulo that no Wine leaves the store under three years of age; but five years is tho avorago tlmo allowed, and thoro isgreat uniformity in each description of Wine from^ year to year. , ' ' .
