There has been erected on the Soutli of the Yarra a Storo House for Colonial Wines, by Messrs A. & R. Caughey, gentlemen of long standing in Melbourne. It is in fact half a Cellar: . the roof, a hollow cistern, full of water designed to promote coolness below; the extent is sufficient for stowing more than a quarter of a million gallons. The Wine has to be stowod in racks from floor to roof, making a prodigious weight to be sustained. The casks contain each from 1000 gallons down to the ordinary GO-gallon size. Adjoining is an extensive Bottling Cellar. It is a fixed rule that no Wine leavos the store under three years of ago, but five years is tlio average time allowed, and there is great uniformity in each description of Wine from year to year.
