GEO. W. BINNEY. UJCTOEIAN WINES. (FROM THE MELBOURNE ARGUS.) There has been erected on tho South of the Yarra a Store House for Colonial Wines, by Messrs A. & R. Caughoy, gentlemen of long standing in Melbourne. It is in fact half a Cellar: the roof, a hollow cistern, full of water designed to promote coolness below; tho extent is suflicicnt for stowing more than a quarter of a million gallons. The Wine has to be stowed in racks from floor to roof, making a prodigious weight to bo sustained. The casks contain each from 1000 gallons down te the ordinary 00-gallon size. Adjoining is an extensive Bottling Collar. It Is a fixed rulo that no Wine leaves the store under three years of ago, but five years is tho average time allowed, and there is great uniformity in each description of Wine from year to yoar. Tho stock in bulk and bottle consists of Shiraz, Hermit.ge, Muscatel, Burgundy, Chasselas, Reisling, Verdeilho, Muscot, Claret, Malbec, Matan, Frontignac, Mcdoc, Hol?k, Chablis, Sauterne, Madona, Maloga, Pedro.
