There has been elected on the South Bank of the Yarra a Store House for Colonial Wines, by Messrs A. & R. CftUihcy, gentlemen Of long standing in Melbourne. It is in fact half a Cellar; the roof, a hollow cistern, full of water designed to promote coolness below ; the extent is sufficient for stowing more than a quarter of a million gallons. The Wine hai to be stowed in racks from lloor to roof, making a prodigious weight to be sustained. The casks contain each from 1000 gallons down to the ordinary UO-gallon size. Adjoining is an extensive Bottling Cellar. It is a Uxed rule that no Wine leaves the utore under three years ot age, but five years Is the average time allowed, and there is great uniformity in each description of Wine from year to year. The stock in bulk and bottle consists of Shiraz, HormitAge, Muscatel, Burgundy. Chasselas, Reisling, Verdeilho, Muscot, Claret, Malbcc, Matan, Frontignae, Medoc, Hock, Chablis, Sauterne, Madena, Maloga, Pedro.
