There has been elected on tho South Bank of tho Yarra a Store House for Colonial Wines, by Messrs A. & R. Caughcy, gentlemen of long standing in Melbourne. It is in tact half a Cellar; the roof, a hollow cistern, full of water designed to promote coolness below; the extent is sufficient for stowing more than a quarter of a million gallons. The Wino has to be stowed in racks from tloor to roof, making a prodigious weight to bo sustained. The casks contain each from 1000 gallons down t» the ordinary GO-gallon size. Adjoining is an extensive Bottling Cellar. It is a flxed rule that no Wino leaves the store under three years of age, but five years Is tho average timo allowed, and thero is great uniformity in each description of Wine from year to year.
