There has been eroded on the South "Bank of the Yarra a Store House for Colonial Wines, by Messrs A. & R. Cau&hey, gentlemen Of long standing in Melbourne. It is in fact half a Cellar; the roof, a hollow cistern, full of water designed to promote coolness below ; the extent is sufficient for stowing more than a quarter of a million gallons. The Wine has to be stowed in racks from floor to roof, making a prodigious weight to bo sustained. The casks contnin each from 1000 gallons down to the ordinary (50-gallon size. Adjoining is an extensive Bottling Cellar. It is a fixed rule that no Wine leaves the store under three years of age, but five years is the average time allowed, and there is great uniformity in each description of Wine from year to year.
