Complaints having been made to me of the quality of Rums lately made up in this market by one or two houses, for shipment to Australia, I think it my duty to address you on the matter, as I find'the Rums complained of have been made up with large proportions of Penang (East India Rum) and. Mauritius, mixed with West India Rum, thereby enabling the sellers to quote lower prices ; but the result of such a mixture can only give a coarse, raw Rum, utterly unsuited to the requirements of the Colonies, and. far below the quality of the Rums hitherto shipped from this market. For many years past, and up to the liquidation of the old firm of Lemon Hart and Son in the latter part of lasfe year, I personally attended to the vatting of all Rums sent out by that firm ; and in making up my Ruhib now for Australia, my aim is at least to equal the standard of quality which I always prepared for that market, and which was so well known. I have no connection with the gentleman who purchased the asßets of the old firm from the trustee, and who now trades in the name of Lemon Hart and Son, at George-street, Tower Hill ; and no Rum is prepared by me except that branded only "Lemon Hart's Rum, London." As with Rums bearing my brand I use only Domerara and West India Rums, I in all cases hand a dock certificate with invoice. At same time, where buyers may require a lower quality, 1 am always prepared to submit much lower prices, but without my full brand. Yours faithfully, LEMON HART. My attention has been called to a circular dated 24th March, 1871, appearing in the Journal of Commerce of Victoria, dated Melbourne, 18th May, 1871. This circular purports to be issued by the now extinct firm of Lemon Hart & Son, and is evidently designed to induce tho belief that it emanates from the former partners of that firm, and that the business is still carried on by them. I hasten, therefore, to inform you that such is not the fact; that the old firm of Lemon Habt & Son no longer exists, having been dissolved in November last; that I, its senior partner, am no party to the circular issued in my late firm's name, and have no interest whatever in the business there referred to, having established myself under the name of Lemon Hart & Co. at the above address ; and that the circular above referred to emanates from Mr. White, of Tenby, who, having boughf the assets of the late firm at a fixed sum, thus unwarrantably assumes to use its name and title. The further statement in the above circular, as to the stafl' who have been specially employed in tho preparation of the Rum shipped by my late firm, refers to the retention of one or two dock clerks, whose only business, as employes, was to carry out the instructions given either by my late father or myself, the secret of the whole matter being, of course, the judicious selection of the various kinds of Rum required for the vurpose, which is only te be arrived at by many year 3of experience, and I need not add that tins part of the business was not done by the " staff," but by myself. All rum shipped by me will bo branded " Lemon Hart's Rum, London." I beg to enclose you my circular of the 10th June, in reference to this matter, and to the quality of the Rum lately shipped from here by one or two houses. Faithfully yours, LEMON HART.
