CHEESE.

To tha Editor. Sir, —The information I »m about to give you I dare say will be interesting to some of your readers who were engaged in the large shipment of cheese from Akaroa and other Bays to London last March. I dare say your readers will recollect that the Little Akaloa dairy people were the first to venture on a trial shipment of cheese to London on a smaller scale, viz., one ion, which we shipped in one of the N.Z. Shipping Company's ships last February, and sent it through Messrs Hudson, Ridley, and Co., Christchurcb, and I am gl&d to inform you that I consider it has been a success. Although it had sweated on the voyage, the price is a proof of its condition and quality. The cheese was packed in ordinary cases, and packed in sawdust from a saw-pit in tho bush, and stowed in the ship's hold amongst the cargo. I herewith give you copy of my sale note, with our London agent's Eemarks:— "J.B. B. cwt qrs lbs £ s d cases cheese @ G3a These were very badly packed, there being no protection to keep off tbe dust. They had. sweated considerably. If theso had been well wrapped in sacking and packed in white pine dust they would have fetched a much better price." Mr Editor, you will see by the price I have got that the cheese could not ha-ve been in very bad condition, and that it can be sent to London and leave a very fair margin, considering the pries here.—l am, etc., J.
