THE SHIPMENT OF CHEESE TO LONDON.
The following cablegram, which speaks for itself, has bee i received by the Manager of the New Zealan i Shipping Company. Christehurch, and forwarded to Mr Westenra, Bank of New Zealand here, who has kindly placed it at our disposal :— " We have just received cabie message dated London, 28th inst., advising arrival of Orari. No word yet as to condition oi cheese." The following letter his been handed to us by Mr Duxbury, t.:e Secretary of the Banks Peninsula Farmers' Club, for psblic ition :— New Zealand Loan and Mercantile Agency Company, Limited, Christehurch, June 23rd, 1881. Re Consignments of Cheese to London. Dear Sir, — By last mail from England I am in receipt of the following ad vice from our London office re shipments of cheese, viz.: — " '.ieferr'ng to enquiry touching cheese, the writer is clearly of opinion, after examination of small shipments made to this market at various times in a series of years from New Zealand, that unless cheese can be so shipped as to avoid the effects of proximity to a miscellaneous cargo, it cannot arrive otherwise thin in a heated condition, and it there ore becomes subject to the disabilities attendant thereon. Even in the short voyage from America by steamor parcels at times become heated, but these are oi; course the exception, and not the rule. The American system of packing-, whether from the United States or Canada; ; admirably suits consumers' requirements. Each cheese, Cheddar shape, and weighing, say, 501bs or upwards, is packed in a wooden box, in which it is tightly fitted. On being taken out of this box ilia in perfect order, as a rule, and fit for retail nse. Best American is now worth 723 per cwt, while good medium counnatids GOs to 66s per cwt, and inferior sells down to 42s per.cwt. But unless accommodation could be found in refrigerating chambers, cheese from New Zealand could not be sent Home in this way. If vessels fitted with refrigerators were regularly despatched from your side, and supplies could be counted on, a considerable outlet would in time be opened up for thorn here. Casual shipments it is difficult to place, especially small lots. Evon if a buyer be found for them, being unaware whether he can count upon the receipt of further supplies, he is not disposed to bid with freedom.
" Wβ yesterday sold a little lot recently received per Northumberland from Wellington. Although stated to have been carried in the ice-house of the steamer, it was more or less heated, and we had difficulty in quitting it at 52s per cwt. The cheeses ran about 501bs each, were of good shape—Cheddar kind—but rather dry, bespeaking want of richness in the milk. But from the sweating, the husks in which they were packed had adhered to the covers of the cheeses, and the grease had stained the inside or' the cases, in each of which four or six oil the cheeses were packed. Before they are fit to be retailed, some trouble and expense will be involved in making them merchantable." Yours faithfully, J no. Cook, Manager.
