I fancy the cap must fit him re the quality of the article in question. The very fact of it having to go through an auction mart to be sold i> quite enough for me as regards the quality. I have been in salerooms in Lhristchurch frequently, and have never yet seen what I would call a good cheese there ; in fact, it is the lust place anyone who wanted a good article would think of going to look for it However, I will act on the writer's suggestion and visit this " hi . Dorado " Bay, and try to get a taste of I the celebrated stuff made th"re. In your leader of the 15th inst. you state that I wish to imply that the low price is due to the bad quality of the ' article produced. In a great measure, [ S'ich is the case. A dairy that turns out a good article will find it much easier to sell their produce than one which turns out inferior cheese. As an instance of tin's, I am informed on good authority that a cheeseniJiker living at Halswell, who has taken first prize at the Christchurch Show for some years, can and does get at the present time 8d per lb. for all the cheese he can make, with an increasing demand, so that quality must have something to do with that. I was very pleased to see that one of our Pigeon Bay cheese-makers had taken a prize at thu Melbourne Exhibition against numerous competitors.—l am, etc., VK RITAS.
