To the Editor.

Sir, —Had " Veritas " used the norn de plume *' Ignoramus," his signature would have been more in keeping with his remarks. He surely would not set himself up as a greater authority than the principal auctioneer of dairy produce in Christchurcli who says of the cheese made in Lβ Bon's, '' That it is the best cheese that ever passed through his sale-room." If Akaroa cheese has anything but a good name, do not say that of the cheese made in other parts of the Peninsula.

Let the Akaroa storekeepers pay ready money for the cheese they buy, and not expect the poor farmers to l«kn instead goods at exorbitant prices, and then they may have offered to them cheese of a good brand.

Good cheese-makoiß in Le Bon's are neither few nor far between, and as little or none of their produce comes to Akaroa, they decidedly object to be classed by "Veritas" or any one else with the makers of an inferior article.

Your leader, sir, had reference to the exportation of cheese and not to its manufacture, and I would endorse all you say, and suggest that a meeting bo at once convened at Robinson's Bay, or the Head of the Bay, to try to arrange to carry out your suggestions. Meanwhile, let "Veritas" come out of the "Sleepy Hollow," and blow the cobwebs out of his brain by a visit to the cheese-makers of Le Bone Bay. who will gladly let him taste a bit of prime stuff for his trouble.—l am etc.,
