APPLE DUMPLINGS. 3|fn|K&KE a nice light suet paste and Skfll *'' * Q k° roun d-Bhaped pieces. aIKJK Have ready a quantity of chopped apples, place them upon, the paste, throw into each some minced candied orange peel, close each one, roll them round with a little flour and put them each into separate cloths that have been wrung out of clean cold water. Pap into boiling water and let them simmer for forty minutes, or according to the thickness of the paste, and serve with sweet sauce. BREAD AND BUTTER PUDDJNG. Cut a penny roll into thin slices and nicely butter each one, butter the dish and lay in slices, then sprinkle some washed and dried currants and minced candied peel, and then Borne more slics of buttered roll, and so on until the dish is full, then make a nice custard with the yolks of three eggs, (reserving the whites), sweeten to taste, pour this over the bread and butter and set in a moderate oven for about half an hour. Beat well the whites of the eggs and place over the pudding in little hillockß and dust over with caßtor sugar. Set back again in the oven till the white is the colour of biscuits. MaCAROONS. Blanch and beat finely a pound of sweet almonds, and put them into a pound of sifted sugar and add a tablespoonful of rosewater to the almonds to keep them from oiling, then beat the whites of six eggs to a froth and add them to the other ingredients. Drop the mixture from a spoon upon wafer paper, dust over a little castor sugar, pop a blanched split almond upon every one and set into a moderately heated oven.

VBEMICELLI PUDDING. Boil three ounces cf vermicelli and a stiek of cinnamon in a piat of new milk. Pat it into a buttered pie dish, and when cold pour over enough custard to fill the dish. Set in a good oven, but do not allow the custard to boil, or it will turn watery. Screen with castor sugar before sending to table.

In making fruit pies, do not line the dish with paste, only the sides before lidding the pie.

A bedroom should never be below the surface of the ground, nor should it be be situated oa the ground floor. The upstair rooms of a house are the driest, brightest, and healthiest.
