Boil half a l >" • pint of milk, or a quarter of a pint of milk and a quarter of a pint of cream, with six or seven lumps of sugar. Four over the gelatine when dissolved!. Grate the rind of a lemon in a glass dish, and pour in also the juice of one lemon. Boil up milk and gelatine mixture again, and pour into a basin, and keep stirring occasionally. When nearly cold (so as not to.curdle) pour over lemon rind juioe, and let -it remain in a glass dish until eaten. Stir occasionally when pouring in the mixtures into the glass dish. FBEKTOH HOUSEWIFE S SOUP. Wash, dry, and cut into small pieces the whits hearts of two lettuces; peel And slice about two inches of a cucumber; "add a few leaves of tarragon, chervil, a sprig of parsley, and a leaf or two of mint. Put all into a saucepan in which yon have melted a piece of butter, and stir for a few minute s over the fire. Pour in one and a half pints of good stock, and simmer gently until all are tender.. Take it from the fire, and when off the boil strain it, stir in the yolks of three eggs, beaten in a gill of milk, season with salt and pepper, add a teaspoonful of sugar, and beat up carefully, stirring all the while until it thickens. Do not let it boil, or the soup will curdle. Serve with croutons of fried bread, . BOOK-PIE. Skin and draw the rooks (six will make a large pie), cut out the backbones, taking great care not to break the gall. Fat these aside, as they are not used. Season the other pans well with pepper and salt, lay them in a deep pie-dish, and pour over them about half a pint of water, and a piece of butter the siza of a walnut. Cover with a good light crust, and lay over that again a sheet of buttered paper, as the pie will take two to two and a half hours baking. tomatcTsoqp. Peel and fry tbe onion in 3ozs of bntter; cut three large tomatoes in four and two rolls in slices, and add, with pepper and salt, one quart cf water, and boil for one and a kalf hours; strain and add one quart of, comma or medium stock, boiling. FAMILY CUREA.NTCAEE. Four pounds of flour, 31bs of sugar, libs of cm rants (well washed and dried), lib of butter, 4ozs of lemon peel, 4ozs ofcitron Ipeel (out very small), ten eggs, eight teaspoonfuls of baking powder, one teaspoonful of carbonate soda, one quart of milk, Beat the butter to a cream, add all but the flour, baking powder, and soda; beat well, then add flour, soda, and baking powder. Bake in a moderate oven in buttered tins.
