SHORT-WEIGHT BUTTER.

TO THE BDITOBi Sib,— l desire to take advantage of your columns to complain of the frequency with which the consumer la oheated by butter-makers. Latterly I have frequently weighed butter supplied by different farmers and m a large number of ioatacoei have found it to be snort weight. Not lew than 30 per cent, Bay one-ihlrd, of the butter, runs from an ounoe to two ounoea short of the pound. This la a piece of dishonesty whioh deserves exposure and punishment, and I do not know how it ia that the polioe or the inspectors of weight* -^rnJ-TDaewursß— do-not Interfere. I know that In tho Old Country these officials every now and then oall unexpectedly at the dairies and if they find butter made on short weight It is confiscated and the owners are fined. Here there seems to be no oheok whatever, and a premium la held out to dishonesty by the faot tbat storekeepers seem afraid to move (n the matter. Aa many stores will buy short weigh! butter without enquiry— passing it on to the consumer, who of course bears the loss— other stores are obliged to do the same thing or lose the farmers' custom. 1 may, however, just throw out the hint that I and other consumers who have Buffered are on the look out, and that we mean to try If we oan't bring some of these short weight cheats to book.
