THE BUTTER INDUSTRY.
♦■ ■ - '(" Auckland Bell.") Daring the last two days a ten favored vial tors have been admitted to wltneeg the operations of this department, and the invariable remark on quilting ths bnildtog has been, " Noir I know what batter to get, and ahall insist upon having the Brae zing Company's ' Shell ' brand." This testimony hag caused the department to consider the advisability of arranging for a visitors' day onco per week. In tba matter of eating butter the proverb, 44 Wftat the eye dcea not ace the heart does not grieve over " is generally applicable, but ia thla case the exception appears, and if a visitors' day is arranged for, we recommend our readers to avail themselves of it. On leaving the chilling room, we weie shown the batteroanning plant whioh has been Imported by the Oompimy, and whioh is now m full operation. The baiter made m the dairy above is brought into the room and placed m tins of one, two, aad four pounds nett capacity. Theoo Una, which have been previously scalded and dried, are filled with bDtter by g rls, and are then passed Into the handa of an operator at a machine. Here the air is expceased from tha tin, and the top is securely fixed m its place by preasare only and without the injurious application of heat, This is done at the rate of about three hundred and fifty an hour, bo that the butter is not In the tins many.Beoonda before it is hermetically sealed up. The advantage i f this rapid work is that no deterioration can take place, as m the case where soldering or other imperfeot methods of seallug up the tin are used. This machine Is a a exceedingly ingenious one ; its operations appear to be almost automatic, and the perfection of its work Is something to be admired. The moat vigorous testa have been applied to tins made by It, with the result that they have been pronounced absolutely air-tight. The tin Is then laqaered and decorated with a beautiful label, which exhibits the department trade mark of a, "Shell,"' the Company's name, and a guarantee of the pureness and character of the bqtter 0 Thia package appears ta be jast the thing for our bush distriots, as well as for the large export trade whiohia sure to be done m It. During the last three months no less a quantity than 53 tons of butter has been sent to the English market by this Company, and returns are now being looked for. It Is maoh to be. hoped that they will prova as satisfactory as the merits of the case deserve.* It is not now thought advisable to continue to make shipments, as butter shipped at thia time would not reach England until the English spring time, which would be too late for the market. Arrangements will, however, be made to have everything m readiness for next year, whioh will probably Involve tha further expense of sending some' one home" to take charge of ooQsignmqnW. This further illustrates, the necessity whioh there Is for this wo^k to be und^er* taken by Companies quoh as this one, Indeed, we are of opinion tb,at the system, described In this ortlole, and thla system alone, will enable New Zealand butter to make Its way m the export markets. The impetus whioh this industry will give to dairying wherever Its operations are felb will be enormous. The Company's systematic dealing, its speolaj plant and appliances, and ltn sUn-*' wharf as a distributing - . , —»<»•* all roin* - ; ■ -6 «entre for export, . * .. uut ub present and prospective importance; Already representations have been made for the extension of tha creamery sy etem at PapakW Waiqku, WaJroa Sp.nth "and Ifokeho, and many other places are" anxiously looking ' for their time to coma. ' ■ Too much credit ctnnot well be given for the enterprise shown, especially when the very large sums of money embarked m the business and the proportionately large regular outlay In carrerit expenses are considered. > - We look forward to the time when the Freezing XJompany'a " Shell " brand of butter will be, as widely and favorably known by meech.an.ts, th.rou.ghou.fe the world as' the preient mo3t celebrated brands are.
