W, K. Yanderbilt is reported to have engaged a French cook at a salary of 10,000 dollars a year, after eating, a dish of wild ducks prepared by the cook. The following is given as the receipt for cooking the relished dish : — " After slicing all the meat off the bird, put the carcase into> a press, squeezing every drop of juice oat of it. Then cook the meat over a spirit lamp on a silver dish and make sauce of the juice."
