Oaf of the largest factories is that of Messrt Barman and Co., of Barlin, where artificial butter is nude according to the prooesi of Me'^e and Maurlea. The best fat It freed from tbe indigestible stearine, then mixed with about twenty-five per cent oi milk, a small quantity of best olive oil and a small quantity of real butter, The materials are heated and kneaded by iteam power, then solidified by means ol a jot of water, whloh is oooled by an ioe machine, then pressed to remove the milk and water, and finally salted and packed ready for the market. Chemical analysis shows that artificial batter is almost Identical with the nataral produot. It contains ninety per oent of fat, seven per 08 at of water, three per cent of salt, and caselne.—" Farmiog World " (Scotland.)
