It ia a mistake to suppose that white wine is exclusively the product of white grapes and red wine of purple grapes. It ia fermentation alone that determines the oolor of wines. The juice contained m both the purple and white grape ia nearly as colorless as water. If it is allowed to ferment without the skins, seeds, and stalks, the result will be a white wine : if, on the other hand, they are left m the liquor, the wine will be red.
