BOGUS CHEESE
The " Country Gentleman," Albany, New York, saya : — ' Some notice haa bedn taken by tlie trade here of ' filled cheoae, 1 or 'lard cheese,' or 'enriched ohoeae, 1 which is m point of fact, a bogus cheese, The process consists m taking all the cream outof the mi k by the ' separator ' and then making the skim milk up and charging the vat just before it is sot with deodorised lard, cottonseed oil, or other fat. Ihe oil ia taken up m the curd and mechanically held there, the cheese curd simply being mod as a capsule m whioh to carry it. There is no aeaimllatlon or chemical affinity between the curd and its , contents. It is simply a square attempt to steal the livery of Heaven to serve the devil In an attempt at fraud. It has cjulta , generally ia the long run paid heavy i loeses to whomsoever h,aß dabbled m it. ' and its manufacture has oontinually : passed into new hands, and this winter i it seems to have a fresh start out West. i This bogas stuff is not really cheeie 5 It is . a skimmed curd and grease m juxtaposij tlon. and by rubbing the grease out of L the curd the two are separated. The trade may at least expect that this stuff will not be mistaken for the desirable , real cheese, and consumption of bo good t an article of food should not be lessened t by the knowledge that these shoddy makei ■re m existence,
